Sapporo is the capital city of Hokkaido, Japan's northernmost main island, and is widely credited as the birthplace of miso ramen in the mid-1950s. The city's cold winters and dairy and corn farming traditions shaped a ramen style built around rich miso broth, butter, and sweet corn toppings.
